Ouzo

This famous aperitif liqueur of Greece is usually over 90 proof. Great for flammable drinks, ouzo is flavored with aniseed.

Although naïve North Americans drink shots of this fiery liqueur, natives of Greece dilute it with ice water (at least four parts water to one part ouzo) and serve it in a tall glass on hot summer days, as is done with Pernod.

Once the liqueur hits the ice water, it becomes opalescent from the herbal oils that remain after distillation.
