Cherry Herring

If only we had a dime for all the times someone bought this brandy with the idea that it was the same as maraschino liqueur. A well-known Danish liqueur that's been commercially produced for about 200 years, cherry Herring started out as the pet project of Peter Herring, a fellow who managed to combine his work as a shipowner with the distribution of his distillate.

Cherry Herring is made from tart cherries and their pits. The latter of these, when crushed, make for a slight tangy almond flavor. This 60-proof brandy has a reputation for being especially dry, but we're not so convinced. But cherry Herring must sell, we're certain, since we come across it often - collecting dust on the shelves of home mixers. We like it best as a layer in a pousse-café.
