Canapé Martha
Recipe by Boston's Locke-Ober
Serves 4
2 tablespoons butter
1 pound fresh lobster meat, cut in large cubes
2 teaspoons paprika
1/4 cup sherry wine
1 cup cream sauce
4 slices white toast
cheese sauce
4 tablespoons grated Parmesan cheese
Melt butter in saucepan, add lobster and paprika, and cook until lobster is heated through. Add sherry wine and cook slowly about 5 minutes. Add cream sauce and stir until mixture is well blended. Place a piece of toast in each of four individual heat-proof dishes and then spoon lobster mixture over it. Cover lobster mixture with a thin layer of cheese sauce, dust top with fresh Parmesan cheese, and brown under the broiler.
