Once commonly used in a variety of cocktails, Maraschino liqueur gradually disappeared as the cocktails which used it fell into obscurity. With the classic cocktail resurgence, Maraschino liqueur is seeing a radical and well deserved comeback. Like curaçao, it is essentially a sweet fruit liqueur flavored, as the name implies, from cherries. Its character is less sweet but more complex than curaçao since the flavor comes not just from the fruit but the seeds as well. This results in a slightly diverse set of flavors that seem to provide hints of chocolate, vanilla and almonds.

Maraschino liqueur should not be confused with modern maraschino cherries. There is no similarity between the two, and heaven help the bartender who substitutes the juice from a jar of maraschino cherries for maraschino liqueur in a cocktail.
