A Forest! Juniper

This evergreen produces fruit that's essential to gin's flavor. The acrid oil of juniper berries is added during distillation in what we like to think of as cocktail aromatherapy.

The berries are placed in a tube above the gin vats. As the oil becomes vaporous, it melds with the gin. Producers of low-quality gins merely dump juniper oil into the vats.
