Worcestershire Crab CakesServes four
1 pound fresh crab meat
1 red bell pepper, minced
2/3 cup butter
3 to 4 teaspoons Worcestershire sauce
3 teaspoons fresh lemon juice
2 lemons, cut into wedges
3/4 teaspoon celery salt
3/4 teaspoon pepper
1 teaspoon Tabasco
4 tablespoons egg, lightly beaten
1 to 1 1/2 cups bread crumbs
2 tablespoons vegetable oil
Combine crab meat with salt and pepper in mixing bowl. In saucepan over low heat, cook bell pepper in 2 tablespoons butter, until soft. Remove pan from heat; add Worcestershire sauce, beaten egg, and lemon juice. Mix with crab meat, and then stir in bread crumbs. Make 8 patties, each about 1/2 inches thick.
In heavy skillet over high heat, mix vegetable oil with remaining butter. Sauté patties for about 5 minutes on each side, until they're crisp and golden brown. Garnish with the lemon wedges.
