Mrs. Graziano's Recipe for Traditional Italian Biscotti

8-ounce package of cream cheese, softened
3/4 cup butter
3/4 cup sugar
1 tablespoon vanilla extract
1 teaspoon anise extract
4 eggs
3 1/4 cups flour
1 tablespoon salt
1/2 cup sliced almonds, toasted


Preheat oven to 400° F. Beat cream cheese, butter, sugar, and extracts in large bowl until well blended. Stir in eggs. Gradually add combined dry ingredients and mix well. Stir in almonds. Flour dough board and hands. Shape dough into three logs, 12 inches by 1 1/2 inch, and flatten logs slightly. Place logs about 2 inches apart on a lightly greased and floured cookie sheet.

Bake 15 to 20 minutes, or until light golden brown. Remove from oven and slice diagonally into 3/4-inch pieces. Place sliced-side down on cookie sheet and bake for another 5 minutes until lightly brown. Flip slices and cook for 5 more minutes.
