Stuffed Zucchini Squash
Serves eight
8 medium-sized zucchini
4 cups soft bread crumbs
1 medium-sized onion, minced
3 tablespoons parsley, minced
1 cup grated cheese
2 eggs, beaten
4 tablespoons butter
Salt, pepper to taste
Cut off ends of zucchini; then cut in half lengthwise. Remove pulp with spoon. Combine bread crumbs, cheese, onion, parsley, salt, pepper, and eggs. Fill zucchini shells, dot with butter, and sprinkle with cheese. Bake in 350° oven.

Cooking time: 30 minutes
