Serves four
4 to 6 fish fillets
4 tablespoons butter
3 tablespoons fresh lime juice
2 limes, cut into wedges
1 1/4 teaspoons tarragon, freshly chopped
3/4 teaspoon paprika
salt and pepper to taste
1/4 teaspoon chives, freshly chopped
Preheat oven to 350 degrees. In baking pan, melt butter. Coat both sides of fillets in butter, before arranging them in the pan. Sprinkle lime juice, followed by the spices mixed together.
Cover pan with aluminum foil and bake until the fish flakes easily. Garnish with lime wedges.
Preparation time: 10 minutes
Cooking time: 10 to 15 minutes
