Farofa (yucca-flour side dish)
Recipe by Valmor Neto, owner of Bahia Cabana and intructor at the California Culinary Academy in San Francsico

Serves 10

1 pound yucca flour
1/2 pound bread crumbs
8 ounces bacon, chopped
1 cup gold raisins
1 cup diced onions
1 cup diced carrots
1/4 pound butter
salt
white pepper
oregano
tarragon
parsley
green onions

Mix yucca flour with bread crumbs and spread across cookie sheet. Bake in oven at 350°F for 20 minutes. While cooking that, fry bacon in a pan. When bacon is crispy, drain grease from pan and add carrots and butter. Sauté for 5 minutes. Take flour and bread crumb mixture from oven and mix with carrots, bacon, and butter. Add spices to taste.

Preparation time: 10 minutes
Cooking time: 20 minutes
