Serves four
4 pounds pork ribs
1 1/2 cups ketchup
1/3 to 1/2 cup white vinegar
4 tablespoons brown sugar
1/4 cup beer
1 teaspoon salt
1/3 cup olive oil
1 yellow onion, puréed
5 cloves garlic, puréed
1 teaspoon cayenne pepper
2 teaspoons liquid smoke
2 teaspoons freshly cracked black pepper
1 teaspoon chili powder
In a heavy saucepan combine the puréed garlic, onion, and olive oil. Add ketchup and vinegar, and set over a low flame. Add the brown sugar, salt, cayenne pepper, chili powder, and black pepper. Stir. Once the mixture becomes hot, mix in the beer. Finally, add the liquid smoke and let simmer for about 10 minutes, stirring frequently. Remove from heat.
Preheat oven to 300°F, and light coals on the barbecue.
Place ribs in a pan. Sprinkle with salt and black pepper, and cover thoroughly with the barbecue sauce. Cover the pan with a sheet of aluminum foil (make sure not to touch the ribs with the foil).
Marinate for about 45 minutes, then cook in the oven for about half an hour.
Remove the ribs from the pan, and grill on the barbecue for about 2 minutes each side. When meat is charred and cooked, serve.
