Creole Crème Cheese Evangeline

Serves six

3 cups fruit (strawberries, peaches, or plums)
2 tablespoons sugar
7 ounces Creole cream cheese (substitute farmer's cheese if you can't find this New Orleans specialty that's a single curd made from milk and surrounded by cream)
1 1/2 cups whipping cream
6 sprigs fresh mint

Wash fruit and peel if desired. Cut fruit into small pieces and toss into a bowl before adding sugar. Cover bowl and refrigerate overnight. An hour before serving, divide the cheese into six individual serving bowls. Pour 1/4 cup of cream over each, and top with 1/2 cup fruit. Dust with additional sugar if desired, and garnish with mint sprigs.
