Serves four
4 boneless, skinless chicken breasts
8 thin slices smoked ham
8 thin slices Swiss cheese
Bread crumbs
1/2 stick melted butter
3 eggs
1/3 cup milk
1 baguette
Fresh raspberries and mint for garnish
Preheat oven to 400°F.
Brush the underside of each chicken breast with melted butter. Onto each, place 2 slices of ham and 2 slices of cheese. Pull the chicken meat around the ham and cheese, and turn each piece over. With the ham and cheese on the inside of the chicken breasts, brush the top of each with a little more of the melted butter.
Beat the eggs and milk together in a bowl. Cover each piece of chicken first with the egg wash, and then with the bread crumbs.
On a greased baking sheet, place the chicken (smooth side up) into the preheated oven. After about 25 minutes, check to see if the chicken is cooked by inserting a sharp knife into the side of the biggest breast. If the knife goes in and comes out with no resistance (and the meat is white all the way through), the chicken is done.
Portion the chicken onto four plates. Garnish with raspberries and mint. Serve with warm baguette.
