Cheese and Prosciutto Canapés
Serves four
2 ounces prosciutto, thinly sliced
2 ounces mozzarella cheese, grated
1/2 cup Parmesan cheese, grated
1 cup mayonnaise
1 tablespoon brandy
1 tablespoon dry white wine
Paprika
Peppercorns, crushed
Butter
4 to 5 slices of bread
Dice the prosciutto. Combine it with the mozzarella, Parmesan, mayonnaise, brandy, and wine. Mix well. Toast bread lightly, and then spread with butter. Cover bread with mayonnaise mixture. Sprinkle lightly with paprika, peppercorns, and Parmesan cheese. Broil until golden brown. Quarter each bread slice to serve.
Preparation time: 10 minutes
Cooking time: 3-5 minutes
